VANILLA SHORTBREAD COOKIES

VANILLA SHORTBREAD COOKIES (about 30)

 Ingredients :

35 g granulated sugar

1 nice vanilla pod

120 g softened butter

140 g all purpose flour

½ teaspoon vanilla extract

60 g almond powder

Pinch of salt

 

For the top : 60 g ice sugar + 20 g vanilla sugar

Instructions :

Preheat the oven 170°C (335°F)

Mix the sugar and the vanilla pod

Then add the vanilla extract, flour, almond powder and softened butter. Mix with a wood spoon.

Transfer the dough on a lightly floured surface and roll it into 2 logs and cut into 2 cm slices

Place the cookies on a baking sheet lined with parchment paper.

Bake for 15 mn.

Remove the cookies from the oven. When they are cold, sprinkle with the mix ice sugar + vanilla sugar.
