27 Mar Cantuccini, almonds biscuits
CANTUCCINI (about 50 bisuits)
140 g granulated sugar
20 g vanilla granulated sugar
50 g oil (sunflower)
290 g all purpose flour + 1 teaspoon baking powder
1 orange zest
200 g almond 1
Pinch of salt
Preheat the oven 180°C (356°F)
In a large bowl blanched eggs + sugar + vanilla sugar + orange zest + salt
Add slowly the oil with whisk
With a wood spoon add the almonds and the flour (with the baking powder)
Transfer the dough on a lightly floured surface and roll it into 3 logs.
Place the logs on a baking sheet lined with parchment paper.
Bake for 25 mn.
Remove the logs from the oven and cut into 1cm slices.
Put the biscuits back in the oven and bake them for 10 mn
